Sous Chef, The Locksbrook Inn, Bath

The Bath Pub Company is looking to recruit a sous chef for The Locksbrook Inn, as we enter our second year of trading in our recently refurbished pub and kitchen. With a stunning waterside location in a highly populated area of Bath, we continue to grow trade month by month, and look for the head chef to continue evolving the all-day menu. 
You’ll be working with high quality regional produce and suppliers and need to be able to help deliver menus that take advantage of this. 
Our restaurant and kitchen are both busy, so you’ll also need to be able to handle large numbers and busy services (the kitchen generates up to £20k a week in food sales). Shifts will vary and you will be working a mixture of breakfast, lunch, and dinner shifts.

The Bath Pub Company operates four premium foodie pubs in and around Bath. Our aim is simple; to run great pubs that people love to visit, and build a company that people love to work for. 

Whilst each of the pubs is owned by one company, we’re a million miles from a branded chain. Each of our four pubs has its own distinct personality and we encourage each of our managers to run the pubs as their own. Each chef creates his own menu according to what will work best for each pub, it’s about as far away from one size fits all as you can get. Four different pubs, each with their own character, but with common values of quality & passion shared by all.

Total annual salary of £26,000, plus bonus of £2,000 per year, and a share of tips (approx. £2,100 a year based on the last 12 months). 

Gratuities are split equally between all staff on a per shift basis.

  • 'Recommend a friend' recruitment scheme, which for each person you recommend and starts working for us, you can earn either £250 or £500.

Tasks and responsibilities 

  • Ensure that all dishes are prepared and presented in accordance with the Head Chef’s directions. 
  • Help develop junior members of staff by leading by example in all aspects of running service and the kitchen 
  • Minimise wastage through proper stock control and menu development 
  • Develop a working knowledge of the menu and specials, keeping abreast of daily changes made 
  • Ensure that you manage your section to a high standard 
  • Develop an understanding of how all EHO documentation is correctly collated and recorded, and that all EHO documentation is correctly recorded and collated 
  • Check all incoming deliveries to verify correct items are delivered. 


Skills and experience 

  • Proven experience working in a busy kitchen with a quality gastro pub food offering. 
  • A strong team ethic - able to develop, inspire and motivate a large brigade of chefs. 
  • Strong menu writing ability, sourcing suppliers and negotiating prices. 
  • Able to embrace & drive change as dictated by customer & business needs. 
  • Demonstrate high standards of professionalism & passion. 
  • Strong time management – work effectively within given time frame to finish tasks set
