Roaming Chef

Roaming Chef, The Bath Pub Company. 

The Bath Pub Company is looking to recruit a roaming chef to work across our estate of four gastro pubs in Bath. Our four pubs include The Marlborough Tavern, The Chequers, The Hare & Hounds and The Locksbrook Inn, which range from 2AA rosettes to neighbourhood pub. 

You’ll be working with high quality regional produce and suppliers and need to be able to help deliver menus that take advantage of this. 

Our restaurants and kitchens are both busy, so you’ll also need to be able to handle large numbers and busy services (the kitchens generate up to £28k a week in food sales at our busiest sites). 

The role is full time (approx. 48 hours a week) over five days, and will always include weekends (unless requested off). Shifts will vary and you will be working a mixture of breakfast, lunch, and dinner shifts. You will be working across the four pubs, but location will vary depending on the needs of the business. You will receive 28 days (pro rata) paid annual leave each year.

Salary:

£10 per hour, no tips/gratuities are included.

Tasks and responsibilities 

• Ensure that all dishes are prepared and presented in accordance with the Head Chef’s directions, while achieving a minimum GP% of 70%.  

• Minimise wastage through proper stock control and menu development 

• Develop an understanding of how all EHO documentation is correctly collated and recorded, and that all EHO documentation is correctly recorded and collated 

• Manage and develop a strong brigade of chefs, training and motivating them, and leading by example to inspire them. 

• Work with the head chef to plan team structure and staff rotas to bring kitchen staff costs in on budget. 

• Work to a consistently high standard in a calm manner and in line with the company’s codes of conduct. 

• Responsible for ensuring all aspects of the kitchen comply with EHO standards to the 5 star level. 

Skills and experience 

• Proven experience working in a busy kitchen as Sous Chef with a quality gastro pub food offering. 

• A strong team ethic - able to develop, inspire and motivate a large brigade of chefs. 

• Strong process, planning and management skills to maximise speed and efficiency both during and out of service. 

• Able to embrace & drive change as dictated by customer & business needs. 

• Demonstrate & demand from your team high standards of professionalism & passion. 

• Strong time management – work effectively within given time frame to finish tasks set 

Applicants MUST... 

- Have your own transport to get to and from work (shifts will be outside of public transport hours). 

- Experience working in busy pub kitchens up to sous chef level as a minimum. 

- Speak fluent English. 

- There is no live-in accommodation available.
